The more time one spends the more you realise that it's impossible to compete with this land on food. Just mind boggling variety.

Without a doubt. And highly underappreciated even within the nation.

Also, the "cuisine gradients" that you can see as you travel from one region to the next is fascinating. For instance North Karnataka cuisine is a beautiful combo of Karnataka and Maharashtra cuisines. Kolhapuri flavors have clear Southie notes.

I guess other regions of the world have their own variety but I can't imagine them being the same or better.

In my home nobody eats fish except me. My mom vegetarian. My dad just chicken and goat. My bro chicken and goat. I eat fish, chicken fish.  Chennai is known for lot of variety fish.  The one that i taste are  Pomfret, Seer fish, Red snapper.

Vanjiram and it's not even close.

Disadvantage is it's only good when it's pan fried.

Advantage is it just has one bone.

This fish is useless if you are cooking it in a curry.

There are specific fish types for curry:

Viraal meen

Sankara meen

@vvvslaxman this was really helpful to get the right English names for each fish

Very hard to order fish by name as they call it differently in each state in local restaurants

In india bro…

Damn. Never faced this problem in Chennai.

If we ask, they usually tell the fish type or the fish type is mentioned in the dish name.
