so far loving Indian specialty coffee ,lots of great roasters all over the country and they are doing the same fermentation  experiments like the rest of the world.you dont need need fancy equipment to try this either, get a good manual grinder and a V60 and get your mind altered by amazing indian coffee.I recommend Savorworks roasters if you want to try a really good roaster to start off.

Where do you store the roasted beans? Room temperature or fridge or freezer?

i had a Fellow Atmos vacuum canister in the US that was brilliant and i recommend it but no need for that in India as a bag barely lasts a week here.my biggest concern in india is coordinating the orders and deliveries in India because they are way ahead of the US when it comes to shipping the Coffee.i had a local Blue Tokai coffee delivered within 24 hours and i couldnt use it for 5 more days because it was roasted on the same day.

you can find more famous indian coffees like ratnagiri, monsoon malabar etc already in the US.i not sure shipping roasted coffee from overseas is a good idea unless it's a lightly roasted coffee.
