Peanut oil is rich in monounsaturated fatty acids, which actually decrease cholesterol and are good for cardiovascular health. What you are referring to is that some plant oils like palm and coconut oil are high in saturated fats, which in turn enhances cholesterol deposits in blood vessels. Sesame oil is used widely in Chinese cooking, but I am not sure if they use it much for stir-frying. I think it is mostly for dressing, but I may be wrong.
