Brainfade Posted January 30, 2009 Posted January 30, 2009 Do you folks use Sona Masoori rice? For puliyodarai, bisi bele bhath, thengai saadam, elimichapazham saadam. Never use basmati for these - the rice aroma will confound the South Indian flavours. Ponni for idli, dosai and adai. Grinds easier, and seems to "hold" the maavu better. Trivia: If one is to believe in the glycemic index (GI), then Basmati rice is better for diabetics than is white rice. It has a GI of ~ 60, whereas other white rice varieties are ~ 70.

I agree.I use Basmati if I prepare Pulao/Biriyani kinda dish.If not i use Sona Masoori.

Personally, I would not trade the best biryani in the world for a plate of Bisi bele Bhath with khara chips and hasi majjige. Or thengai saadam with moar kuzhambu.
