akshayxyz Posted September 26, 2011 Posted September 26, 2011 Yep This is karrhi Saag can be made of any vegetable The tradional northie saag is made of leaves of - sarson (mustard), palak( spinach), and little bit of methi and bathua too. - all are green leaves. and perfect saag is the one that is cooked in earthern vessel - cooked on slow flame on mitti ka chulah/angethi - from start to end.. no use of mixer/grinder is allowed. Cool' date=' here [b']Karrhi+Pakoray combination is popular... and Saag, well, not of ANY vegitable but there are 3,4 particular... not sure even we can say it vegitable, like "sarsun..." mostly made using "Lassi"... and gives an ultimate taste with "baajray ki roti"... :two_thumbs_up: Baajrey kee roti or makki(corn flour) kee roti - served with home-made fresh butter - churned out from fresh curd.

Exactly, if one hasn't tasted both versions (modern kitchen vs village kitchen) - they would keep wondering what the hell are we talking about. Same about makki/bajrey kee roti - the one cooked with hands on wooden fire in matti ka chulah - tastes entirely different from the one cooked on gas-stove.

FTFY. every region kadhi has its own uniqueness.. only the base is same, butter milk with gram flour. I grew up eating northie kadhi, and have tried Rajasthani kadhi too..both are excellent in their own ways. The only version of kadhi that I have issues with is - the one we get in southie restaurants, or infact any restaurant....since to make a perfect kadhi, it takes time and patience, which restaurants don't have enough of. same goes with saag.

Arre maine to google images se uthayi yr, pattiya daalte hai kai jagaho pe, aur besan ke pakodi to awsome hoti hai :eating:
