^ If they were genuine enough in their opinion, they would have uploaded the complete video. The very fact they are breaking the video into bits & pieces smells a rat. Not only does the footage makes no sense but bits & pieces leads to further corroboration of the customer's story.

A professional establishment implements surveillance over its own property. It deals with first time harassments as a loss and then refuses to seat any 2nd time offender with high rates of success. This involves having CCTVs in your restaurant and then going back to your office, printing out the face of the offending guy and putting it in the folder that says 'not to be served'. Then make sure every employee sees it. Put copies on the kitchen wall. Heck, i've seen top level establishments politely serving scam jobs with all they ordered, even packing their food up as take-outs when they know these feckers are not going to pay but making *sure* that they dont get seated once they show up at the restaurant next time. Ideal is to have a waiting room before the restaurant, where you must stand around waiting to be seated (usually wont take long at all, its the meet and greet at the door), ideally in a seperate room from the dining hall. But it doesnt have to be big budget- this is how one hole-in-a-wall desi food place took care of bums and non paying customers ( the location of this place, where i used to live by, was unfortunately the best connected part of town via transit but bum central) : the times he felt that he was being cheated, he serve them a replacement, wait they went away and then never let them sit down again at his joint. But never made a fuss about the money. {maybe because he is a lebanese and his wife is the desi cook} His wife would immediately scoot over from the kitchen if bums returned and refuse to let them sit down. If you dont let them sit down, they cant order and if they cant order,they cant scam you. .Dunno about desis but out here, if you are being refused service, people dont bat an eyelash and think you are a d!ck by default. And when the cook shows up (you know she's the cook from her attire and splotches) and starts to ask you to leave, you better go because nobody is gonna want to hear your side of the story while their dinner burns Once you've been served, people tend to think that the server/manager is the d!ck and therefore, your business loses when one gets to the table, orders food and picks a fight. Chalk it up to a slow day or whatever, but your business should be able to absorb the occasional '1st time scam job bums' if you have good denial of service rate to 2nd time offenders.
