Considering the relatively volatile situation in Israel, is it a place where you could go on holidays trusting the IDF?

Tourist would have an option to select the area to visit and also the time to visit (unless already there when such a conflict erupts) 

you have answered your tourist question yourself in the OP. anytime anything will occur to non-israelis in israel and the israelis will say "you made your bed now go lie in it". israeli govt is more interested in its own people not tourists and it has every right to be so. you are going to a terrorist hellhole and you want to be safe Even the country you live in or India will wash their hands off.

That is your opinion. If safety is paramount to you, the places you could go to are limited. Y’day, there was a knife attack in Germany for e.g. and as a tourist one would get caught up in such events if unlucky 

Ppl have different risk tolerances due to different perceptions and goals

 

Israel is reopening for tourism (closed due to covid) in a limited way with vaccination requirements (obviously)
