Indonesian is particularly close to the Indian palette, spicy and explosive. I really dislike chinese food but on the flip side it makes me quite horny. anyone got wagamamas in their area!! their food rocks!! personally i think chinese is better in india!!

Ram Posted June 16, 2009 Posted June 16, 2009 There's a Chinese restaurant here in Tampa called the Yummy's. At first look, you woundnt think much of the place. Its looks pretty ordinary at the front, there arent any big hoardings. But my God, the food is fat-bleeding-tastic! The best part is that the portions are pretty big too. So for $15-$17, you can have an appetizer, an entree and a side AND come out really contended and full. :D I just love the way Chinese people use brocolli in their cooking. I've tried doing the same at home, but it never feels or comes out the same.

You need a wok or a heavy skillet; heat oil to high heat (shimmering); throw in the broccoli for a short time (2 min; maybe 3 max). Cooked yet crisp and tender. I know there are gourmet chefs on this board, but this is my $0.02 worth of advice :)

There is a little dive here that does a great job. I just tell him to put some extra heat (more whole red chilies) and hold the sweet sauce.

Disclaimer: I am no expert. I love to cook - it relaxes me; this is just stuff that I have picked up over the years reading about cooking and trying out different things.

The ancient Chinese people used Camellia oil. But since the 1800s (I think), peanut oil is widely used in Chinese cooking. The bottom line is "use a high smoke point oil." (stir-frying = high heat). Vegetable (soy) oil or canola oil also have fairly high smoke points, but peanut oil imparts a better flavor. Hence the advice to use peanut oil. FWIW, I use vegetable (soy) oil because you can buy it in bulk and it doesn't go rancid as quickly as does peanut oil. As for allergies, note that the the allergen (allergy-causing molecule) is not in the oil; rather, it is a peanut-protein which gets separated from the oil during processing. It may be found in trace amounts in the oil. Studies show that most people who have peanut allergies can tolerate peanut oil. All that said, I would guess that most Chinese restaurants in the US use vegetable oil since it is cheaper than peanut oil. Plus, who wants to run the risk of a hyper-allergic person reacting to trace amounts of peanut protein?
