In Ambur, it's dum briyani and in Arcot/Ranipet, they use a slightly different dum which gives a soft meat. It's extremely hard to replicate for the other cooks. also, broiler chicken briyani is yuck. Mutton briyani is best everywhere. If chicken, go for naatu kozhi or desi murgi.

In Maduari, Anjappar biriyani is at par but not in taste of Ambur biriyani, but u need to pay almost twice the amount for it.

Kerala biriyani is worst of all :facepalm:

Albeit travel for a month with a couple of Senkot packets is advisable!!

Kerala biriyani is worst of all :facepalm: bad hotels are everywhere dood. The best briyani I had in kerela is in paris hotel in thalassery. They have this kerela speciality sea snail, a must try. Where ever u go to kerela, you have to ask for extra masala in briyani, as we are used to it.
