coffee_rules Posted September 24, 2010 Posted September 24, 2010 ++ Banglore sambar suxxx Tambi Sambar is too sour, they use too much tamarind. They don't know how to make Sambar. The masala/powder should be ground to a paste, not a powder like they do in Chennai.

But that doesn't mean Bangalore Sambars are any better. Sweet sambars are simply yucks :beee: Atleast Chennai sambar is spicy

The masala/powder should be ground to a paste, not a powder like they do in Chennai.[/quote'] We do it both ways. Typically people have a Sambar powder pre-ground for easy daily making and you just add a few spoons of it to your tamarind water/veges, boil it and add the dal. If you have the time (like weekends or school holidays for the kids), you roast the spices and grind it with coconut to make the paste just for the that instance and make sambar with it, which obviously tastes better. Regarding tamarind, that is personal, there is no Chennai approved level, each family uses different levels. I personally prefer it slightly on the lower side.
