How does one differentiate between Hindi and Urdu? 

The sentence he wrote could easily pass as Hindi.

Ghalib uttar bharat ki hi paidaesh hai.

North India used to be very rich in language. Hindi urdu sanskrit and offcourse local dialects like awadhi maithili braj.

As @Laaloo said. Most Hindi superstars themselves do not have command over Hindi language( infact any language)

Come on, it's actually their bread and butter. The star kids off Bollywood do that hoping that they might get spotted by Hollywood or British casting "scouts". Speaking in native language means they get ignored. Meanwhile a struggling or a lesser known artist avoid Hindi because they know they can't be tied down to a single Industry, so it may give them some chance in South, vice versa with southern artists. 

This not just India, the Chinese and the latins do that too.
