riya Posted February 7, 2015 Posted February 7, 2015 Just finished tasting this epic grilled fish Recipe : Take a lot of lemon juice, add tandoori masala from mdh put just for flavor ie 30% of what is suggested, pinch of salt, mix 2 table spoon of coriander n chilli chutney, use the one you can find freshly made and never frozen. Add little yogurt and mix. I didn't marinade it for long so I just dipped it and and put it in the oven. Make sure you leave a nice coat of marinade on top. Broil it for 10 mins or so. Flipping over isn't possible so let it rest and then eat the fish and thank desi Thank you!!

Zelig Posted February 21, 2015 Posted February 21, 2015 Fish Curry 1. Wash the fish. Cut them into pieces as needed (I use fillets as they are) 2. I usually marinate the fish using a seasoning mix (Shan). You can use the fish as it is too. 3. Heat a saucepan over medium heat and swirl in the oil. 4. When the oil is heated, add onions (2 pieces), ginger, garlic and green chilli. 5. Saute for about 5-7 minutes. 6. Add tomato (3 pieces) and saute. Stir frequently and smash the tomatoes well. 7. Add the garam masala, chili powder, turmeric powder, salt and pepper (or fish curry powder + salt). Stir to combine and cook for a few minutes. 8. Pour in the coconut milk and the water. 9. When it is well boiled, add in the fish. Don't stir after adding the fish. If you're lucky, it will come out alright :yoyo:

Brainfade Posted February 25, 2015 Posted February 25, 2015 Question for the biryani experts re. fried onions (calling The Outsider!) For my Hyderabadi biryani marinade, I've only used onions that I fried to a crisp at home. But it is the most tedious part of making biryani and I am getting tired of it. Have you used any good store-bought fried onion? Any brands you would suggest?
vvvslaxman Posted February 25, 2015 Posted February 25, 2015 Is it mandatory we should use that. I skip that part and stir fry the onion slightly longer.
The Outsider Posted February 25, 2015 Posted February 25, 2015 For my Hyderabadi biryani marinade, I've only used onions that I fried to a crisp at home. But it is the most tedious part of making biryani and I am getting tired of it. Have you used any good store-bought fried onion? Any brands you would suggest? I've never tried the pre-packaged ones. I usually cook Lucknow Biryani for which they are not needed. However, for these repetitive and time consuming tasks try doing them in a larger quantity and freezing the rest. The time frying onions for one Biryani is about the same as for five. It's specially fine to freeze stuff with minimal water like brown fried onions are without distorting the taste when thawing.
cowboysfan Posted February 25, 2015 Posted February 25, 2015 I have used the pre packed ones, they taste weird by themselves but i would definitely use it if you dont want to fry the onions by yourself.
gattaca Posted February 25, 2015 Posted February 25, 2015 Frying onions takes 10-15 minutes time only. Why is it taking so long for you ?
Malcolm Merlyn Posted February 25, 2015 Posted February 25, 2015 The Kolkata Biriyani too doesnt require the fried onion paste marinade.
