Add cumin seeds, onions, green chillies and fry together till onions get brown. Add Ginger and garlic paste. Allow it to cook for 2 mins. Add turmeric powder, red chilli powder, corrainder powder and fenugreek seed powder. Mix it well and cook it properly. Add chopped tomatoes, whole garam masala (cardimom, bayleafs, cloves etc), salt and pinc of sugar. Cover the lid and allow it to cook till tomatoes gets pulpy. Add the contents into the boiling gravy and let it cook for 2 more minutes. Add Cashew in the end (optional) Close the flame and allow it to stand for 5-10 mins before serving Spinach - Brinjal - Potato Curry (very healthy and my favorite) Cut potatoes in diced slices (8 slices per potato) Cut brinjal into small cubes and chop spinach. Heat oil in a pan and add Kalonji (Black onion seeds) Add Potatoes, Brinjal and green chillies. Fry them for 5 mins in medium flame. Add chopped spinach. Mind you the quantity of spinach reduces in flame, so take the quantity accordingly. Cook for 10 mins and add lukewarm water. Let it boil untill potatoes are boiled properly. Add little garam masala and allow it to stand for 10 mins before serving. Dal Tadka Take a vessel and boil toor dal. Add turmeric powder and salt. While it is boiling, take a pan and heat oil.
