Controversial opinion

 

Bihar is only major state without specific cuisine.

 

Litti chokha, champaran mutton and list ends.

 

Rest sweets and snacks.

Or Uttarakhand?  Except for Momos

Bihar food is very simple but very homely and everyday like.

 

Dal bhat and aloo bhujia is a staple.  Bihari Khichadi. Bihari style bharta.

Gutti vankaaya curry is a under rated telugu delicacy. The definite king of curries.

 

Thankfully not yet noticed by punjabis. If they do, they will add butter and ruin it.

Related to bharwa Baigan. But there is no curd added to gutti vankaya or bhagara baigan. The tanginess comes from the tamarind. And there is much more gravy in gutti vankaya. Coconut , sesame seeds and peanuts are used.

Gujarati Bharwa Baigan also includes peanut powder and looks identical but the color is dark due to heavy use of coriander powder and kashmiri laal mirch.

Hyderabadi / Andhra versions have Dry coconut and sesame which make it look less dark and more creamy texture.

The green cour color thingy you see is south Peruvian habanero.. rare spiciest chili

Anywhere. Once you have eaten in Delhi everything feels bad in Hyderabad.

 

Hyderabadi food in general not impressive.

Papaji ka dhaba in abids is good. There's veerji ka dhaba in lower tank bund which is good as well. 

 

There's a shack called Uday cafe near papaji ka dhaba which serves some awesome food as well. But don't go with families. It's a shack. 

 

Plenty of branches of norfest which are good as well. 

 

It's as good as you get in south cities. You won't get the amritsari chole etc etc but still very passable. Better than having what passes for south indian in most if not all areas in North India.

There's one of the original branches of Santosh dhaba next to papaji ka dhaba as well. It's pure veg though. As is veerji ka dhaba. 

 

But worth a visit.

That's like having south indian food in Delhi and comparing to the ones we get here. 

 

Different cities , different cuisines. Hyderabad does it's bet well. Delhi does it's bit well.

Habanero isn't that spicy.
