it's all about the proportions didi. thick cream : milk : sugar : egg yellow :: 6 : 3 : 2 : 10 heat the cream, milk, sugar and a little salt until sugar completely dissolves. mild heat. then whisk the egg yellow and slowly add the heated mixture until everything becomes like a jelly like mix. then heat it using medium flame until it becomes like a thick and heavy cream. then cool it overnight and put it into the ice cream maker. I m a kind of expert in this.

no egg white for home stoves. it will turn the ice cream into a wierd cake :cantstop:, due to the lower viscosity. factory made icecreams add full eggs, since the method is a lot different

I don't have one in the US, but my parents have it in India. My main takeaways: 1. It's really expensive. I researched a few before buying one for my parents, and anything less than $300 is flaky either in size or quality. With import duties, I am expecting the cost to go up to Rs. 25,000+ in India. These numbers are 2-3 years old so prices might have come down. 2. The food quality is okay - nothing like the real thing. It's good in a family where people love their fried stuff, but also want to control for oil, and are not extremely sensitive about taste. Don't get me wrong - the taste is still decent. If you are able to cook something 9/10, you should be able to get 6-7/10 with it. 3. Where it completely fails is if you are having people over. It's simply too tasteless, time consuming, and not worth the cost as an assistant in making pakoras.
