LOL though Puja is not incomplete without Hilsa but we Bengalis go total carnivore during Durga Puja time. And Hilsa fish, which we call as Ilish maach, is most sort after. Its bit like how Salmon is to the west. Hilsa Fish with mustard & Mutton curry with aloo are are prepared in most household. Only on Ashtami (8th day of Navaratri), we eat veggie

 

Menu in Most Bengali household during Puja

Breakfast - Luchi (poori), aloo dum, Misthi

Lunch - Generous amount of Rice, ghee, moong dal, aloo fry, mutton curry or Ilish maach, Misti Doi, Sandesh

These days I cook only with mustard oil in most veg curries. Has an exquisite taste over other edible oils. Too good. Most Bengali food is made with mustard oil, I suppose. Jhal Muri with mustard oil is the best , tops all versions of Bhel puris.

Yes bengali, Punjabis and also Biharis cook with mustard oil.

 

The trick to cook with mustard oil is, you need to first heat the oil and let it completely cool down. This removes extra fizz and raw smell out of the oil. Then you should cook.

It took me a while, it is acquired taste, I guess. I love the tinge of spice it adds. Most of Telugu Avakkai pickles use mustard oil with ground mustard. If you like that, this should be good too.

You get a lot of authentic Bengali cuisine in the US? Bangladeshi run Indian restaurants aplenty in your area? My fav cuisines in India are Tambram, Kannadiga (top of the list masala dosa), Andhra (esp pappu & podi), Punjabi, Indo-chinese and Mumbai & Blore street food. Some marwari, gujju and Rajasthani cusine is good - but overall not as good as the others. 

 

Don't eat meat/fish - so Goan, Marathi, Keralite, Bengali/Oriya, Konkani. Don't like Chettinad, Hyderabadi, Mughlai, Kashmiri, Himachal, Ladakhi, Nepali/Tibetian, etc.

I have a lot of Bengali friends and I keep eating their food. Developed a liking for that. I am a vegetarian now, eat also eggs. I have eaten meat/fish earlier. I like eating different cuisimes, never tried Oriya so far. Have tested all others you mention and like them. I started using cocnut oil and mustard oil these days more.
